Ingredients
  

Longganisa Hash with Tomato Scrambled Eggs

  • 2 tablespoons Oil
  • 1 large white onion finely chopped
  • 2 large Potatoes diced
  • Salt
  • 8 to 10 pieces longganisa cooked and crumbled
  • 6 pieces Egg
  • 2 large tomatoes chopped
  • 3 tablespoons Oil
  • 3 tablespoons Garlic finely chopped
  • 4 to 6 cups day-old rice

Instructions
 

  • In a skillet, heat oil then sauté onions. Add potatoes and cook until tender. Stir in the cooked longganisa. Season with salt and pepper.
  • Beat the eggs then season with salt and pepper.
  • In the same skillet used for cooking the hash, heat more oil. Sauté tomatoes until slightly soft.
  • Pour in the beaten eggs. Scramble until set.
  • For the garlic fried rice, heat oil in a wok. Lightly brown the garlic then add the rice. Stir-fry until fragrant. Season lightly with salt.
    To serve, fill a plate with longganisa hash, scrambled eggs, and garlic fried rice. Serve hot.
