Ingredients
Longganisa Hash with Tomato Scrambled Eggs
- 2 tablespoons Oil
- 1 large white onion finely chopped
- 2 large Potatoes diced
- Salt
- 8 to 10 pieces longganisa cooked and crumbled
- 6 pieces Egg
- 2 large tomatoes chopped
- 3 tablespoons Oil
- 3 tablespoons Garlic finely chopped
- 4 to 6 cups day-old rice
Instructions
- In a skillet, heat oil then sauté onions. Add potatoes and cook until tender. Stir in the cooked longganisa. Season with salt and pepper.
- Beat the eggs then season with salt and pepper.
- In the same skillet used for cooking the hash, heat more oil. Sauté tomatoes until slightly soft.
- Pour in the beaten eggs. Scramble until set.
- For the garlic fried rice, heat oil in a wok. Lightly brown the garlic then add the rice. Stir-fry until fragrant. Season lightly with salt. To serve, fill a plate with longganisa hash, scrambled eggs, and garlic fried rice. Serve hot.
