Low-fat Sugar-free Lemon Cheesecake

  • 100 Grams Butter
  • 200 Grams graham crackers crushed
  • 300 Grams low-fat cream cheese
  • 20 Grams artificial sweetener
  • 20 ml lemon juice
  • 1 envelope unflavored gelatin
  • 60 ml cream
  • 250 Grams whipping cream


  • Prepare the crust: Melt butter in a small saucepan, then add to crushed graham crackers. Mix until well blended. Transfer mixture to a small pie plate or springform pan and press against the bottom of pan to form a solid crust. Keep in chiller.
  • Make the filling: Cream together cream cheese and artificial sweetener until smooth and light. Add lemon juice, mix well, and set aside.
  • In a small saucepan, unflavored gelatin powder in cream. Bring to low heat, stirring consistently to distribute gelatin. Turn off heat before mixture boils. Cool slightly then add to the cream cheese mixture. Stir until well blended.
  • In another bowl, beat whipping cream until stiff. Add this to the cream cheese mixture and fold well. Transfer to premade graham cracker crust and keep in the refrigerator overnight or until set.
