This recipe is a perfect mix of sweet and tart flavors!
1/2 cup fresh mango purée
4 egg, yolks only
1/2 cup sugar, or to taste, depending on the sweetness of mangoes used
2 tablespoons lemon juice
1/2 cup or 1 stick butter, cut into cubes and kept chilled
Combine mango puree, egg yolks, sugar, and lemon zest in a small stainless steel, non-reactive saucepan. Whisk to combine.
Cook mixture over low heat, stirring, until it registers 160 degrees fahrenheit on a cooking thermometer. It should thicken slightly.
Remove from heat. Stir in lemon juice and butter. Mix until well-incorporated. Transfer to a sterilized bottle or container and chill for at least 6 hours before serving. Store in the refrigerator for up to 5 days.
