Who doesn’t love bacon? Here’s a meatball and bacon recipe the whole family will enjoy. Huge beef-and-bacon meatballs are paired with rice that’s loaded with bacon, too!
250 grams beef, use ground beef
250 grams bacon, chopped finely
1/4 cup parmesan cheese, grated
1/4 cup fine breadcrumbs
1 piece egg, beaten
1/2 teaspoon black pepper
2 tablespoons cooking oil, divided
2 tablespoons garlic, chopped
2 tablespoons red onion, finely chopped
2 tablespoons tomato paste
salt, to taste
1 can canned diced tomatoes
1/4 cup beef stock
120 grams bacon, chopped finely
6 cups white rice, cooled
2 tablespoons soy sauce
parmesan cheese, for garnish
Make the meatballs: Combine all ingredients in a bowl. Mix using your hands until well combined. Divide mixture into 6 portions.
Form each portion into a ball. Set aside in the chiller for at least 30 minutes.
Heat 1 tablespoon oil in a shallow saucepan over medium heat. Add meatballs and sear until all sides are browned, turning gently to prevent them from breaking. Remove meatballs from pan and set aside.
Make the stewed tomato sauce: heat remaining oil in the same pan over low heat. Sauté garlic and onions until soft. Add tomato paste and season with sugar, salt, and pepper. Add diced tomatoes and stock; simmer for 3 to 5 minutes.
Add meatballs to the sauce, cover, and simmer. Check every 1 to 2 minutes and turn meatballs until evenly cooked, about 15 minutes.
Meanwhile, make the bacon fried rice: Sauté bacon in a nonstick pan until crisp and fat is rendered. Add cooked rice, soy sauce, salt, and pepper. Stir-fry until rice is warmed and well coated.
Sprinkle meatballs with parsley and parmesan cheese. Serve warm with bacon fried rice on the side.
