Meatless Chili Soup

  • 1 white onion chopped
  • 1 (28-ounce) can canned diced tomatoes
  • 1/2 cups red kidney beans rinsed and drained
  • 1 1/2 cups chicken broth
  • 2 celery (stalks only), chopped
  • 1 Cup carrot diced
  • 1 teaspoon chili powder (or add more to your liking)
  • 1 teaspoon Garlic powder
  • 3/4 Cup corn
  • 1/4 Cup corn
  • 1/4 Cup fat-free Italian dressing
  • 1/2 Cup Cheese grated
  • Cheese grated


  • Boil all the ingredients (except cheese) together. Then turn heat to low and simmer for 20 minutes.
  • Stir in 1/2 cup grated cheese; simmer for another 5 minutes.3 Top with grated cheese. You can also add a dollop of yogurt (instead of sour cream) on each individual bowl, if desired.
