Ingredients
Meatloaf, Roast Pepper, and Cheese Sandwich
- 1/4 kilo pork use ground pork
- 1/4 kilo Beef use ground sirloin
- 1 Small onion chopped finely
- 1 medium carrot cut into small cubes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil leaves
- 1 teaspoon Salt
- 1/4 teaspoon black pepper
- 1 Egg
- 1 (115-gram) can button mushrooms sliced or chopped
- 225 Grams bacon (use honeycured bacon), chopped
- 1 medium focaccia bread for half a loaf rustic ciabatta bread
- extra virgin olive oil
- 4 medium bell pepper broiled and peeled
- 70 Grams cheddar cheese grated
Instructions
- Preheat oven to 350ºF.
- Make the meatloaf: Combine all the ingredients for the meatloaf in a bowl, taking care not to overmix. Put mixture into a small loaf pan and cover with foil. Bake for 40 minutes or until internal temperature is 140ºC. Take out and place on a rack to cool. When cooled, turn over on a plate.
- Assemble the sandwich: Slice bread horizontally then brush each side with extra virgin olive oil. Slice meatloaf into half-inch slices. Brush each side with olive oil.
- In sequence, put a slice of meatloaf on bread, cover with a layer of bell pepper, top with cheese.
- Cut sandwich into single-size servings. Serve immediately.
