Meaty Meatloaf
- 1 kilo Beef use ground beef
- 1/2 kilo pork use ground pork
- 1 Cup smoked bacon chopped
- 1 tablespoon rock salt
- 1 teaspoon black pepper
- 4 tablespoons sugar
- 1 teaspoon Cayenne pepper
- 2 tablespoons Worcestershire sauce
- 2 tablespoons mustard
- 2 tablespoons mustard
- 1/2 Cup carrot grated
- 1/4 Cup fresh parsley chopped
- 1/4 Cup parmesan cheese
- 2 tablespoons Spanish paprika (pimenton)
- 2 tablespoons Butter
- 6 cloves Garlic crushed
- 2 large onion minced
- 1 large red bell pepper diced finely
- 1/2 Cup celery (stalks only), diced
- Salt
- 1 can mushroom soup
- 3 Egg
- 2 cups fresh breadcrumbs
- 1/4 Cup tomato ketchup for brushing
- 4 tablespoons Butter divided
- 2 tablespoons Flour
- 1/4 Cup red wine
- 1 Cup beef stock
- 1/4 Cup meatloaf drippings
Instructions
- Make the meat mixture:Â In a large bowl, mix all the ingredients together until well incorporated.
- Make the breadcrumb mixture: Melt butter in a frying pan and sauté garlic, onions, bell pepper, and celery until vegetables are tender. Season with salt and pepper. Place cream of mushroom soup in a bowl and add sautéed vegetables; mix well. Beat in eggs and add soft breadcrumbs until blended together.
- Add breadcrumb mixture to the meat mixture; mix well. Chill for 30 minutes.
- Divide mixture equally between two loaf pans. Brush with ketchup. Bake for 1 hour in a preheated 350ºF oven. Increase temperature to 400ºF and continue baking for another 30 minutes or until golden brown. Let rest for 1 hour before slicing. Reserve drippings.
- Make the gravy: Melt 2 tablespoons butter in a saucepan. Add flour and cook for 30 seconds. Add drippings and mix well. Add red wine, stock, and chicken bouillon cube. Whisk into a smooth consistency and continue cooking until slightly thick. Season with salt and pepper. Remove from heat and stir in remaining butter.
