Preparing a Mexican fiesta? Be sure your rice is in theme, too! Mix in some tomatoes, cilantro, and boil it down with some chicken stock for extra flavor.
1/2 chicken bouillon cube
2/3 cup hot water
3/4 cup rice
1 tablespoon oil
1/2 cup tomatoes, stewed
1 tablespoon cilantro (wansoy), chopped
Dissolve Knorr chicken cube in hot water; set aside.
Heat oil in a saucepan over medium-high heat. Sauté rice until all the grains are covered with oil.
Add stewed tomatoes and prepared chicken broth; mix until simmering. Cover the pan, mixing the rice once or twice, until cooked.
Remove pan from heat and mix in chopped cilantro. Season with salt and pepper. Serve warm.
