This all-in-one fried rice meal is an Indonesian recipe. Translated to mean “fried rice”, this stir fry is really just a fried rice recipe that mixes your ulam and rice into one meal. What makes this impressively different in flavor from other fried rice recipes is the sauce that is tossed with it. 

The nasi goreng recipe is sweet and savory at the same time because of the kecap manis that is in the chicken marinade as well as the stir fry sauce.

Can’t find kecap manis? Make it yourself using this simple Kecap Manis recipe: combine 1/4 cup soy sauce and 1/8 cup brown sugar in a saucepan over medium heat. Bring to a boil, lower to a simmer, and then reduce until it coats the back of a spoon. Remove from the heat. It will thicken even more when cooled down. When ready to use, reheat in the microwave to liquify the mixture.

Ingredients
  

Nasi Goreng Ingredients

  • 1 tablespoon Oil
  • 2 cloves Garlic finely chopped
  • 1 teaspoon red chili pepper (siling labuyo) finely chopped, seeds removed, more to taste, for garnish
  • 1 Small red onion chopped
  • 100 Grams ground chicken
  • 1 tablespoon kecap manis (Indonesian sweet soy sauce)
  • 3 cups day old cooked rice
  • 2 tablespoons kecap manis (Indonesian sweet soy sauce)
  • 2 teaspoons shrimp paste (bagoong alamang)
  • 1 stalk green onions Chopped, for garnish
  • tomatoes chopped, to serve
  • cucumbers cut into half moons, to serve
  • fried eggs to serve

Instructions
 

  • Heat oil in a large skillet or wok over high heat. Add chili and garlic, stir for 10 seconds. Add onion, cook for 1 minute.
  • Add chicken, cook until it mostly turns white, then add kecap manis, and cook for a further 1 minute or until chicken is mostly cooked through and a bit caramelized.
  • Add rice, kecap manis, and shrimp paste, if using. Cook, stirring constantly, for 2 minutes until the sauce reduces down and rice grains start to caramelize. Serve with cucumbers, tomatoes, and a fried egg on top.
