Here’s my Choco Butternut Loaf Cake, inspired by Choco Butternut Donuts of Dunkin Donuts. It’s a moist and soft chocolate cake covered in glaze and butternut coatings.

Ingredients
  

No-Bake Choco Butternut Loaf Cake Ingredients

  • 3 cups all-purpose flour
  • 1 Cup unsweetened cocoa powder
  • 2 cups white sugar
  • 2 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 cups hot water
  • 3 teaspoons instant coffee powder
  • 2 tablespoons white vinegar
  • 1 tablespoon vanilla extract
  • 2/3 Cup vegetable oil
  • 2 large eggs
  • 1 Cup all-purpose flour
  • 1/4 Cup white sugar
  • 1/4 Cup unsalted butter melted
  • a pinch of nutmeg
  • 1 Cup Powdered SUgar
  • 3 teaspoons orange food coloring
  • 1 Cup Powdered SUgar
  • 3 tablespoons fresh milk
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large bowl, combine and sift the dry ingredients: flour, baking soda, salt, cocoa powder, and sugar. Mix until well combined. Set aside.
  • In a separate bowl, combine the wet ingredients: hot water, instant coffee powder, white vinegar, vanilla extract, vegetable oil, and eggs. Mix until combined.
  • Combine the wet and dry ingredients. Mix until well incorporated and the batter becomes smooth. Do not over mix.
  • Pour the cake batter into a greased 8x4-inch loaf pan. Tap 3 times to release air bubbles.
  • Steam the cake for 50 to 60 minutes or until the toothpick inserted comes out clean. Wrap the lid with a kitchen towel to avoid water from dripping onto the cake. (Another option instead of steaming is to bake in a preheated oven at 350 degrees F or 175 degrees C for 35 to 40 minutes or until the toothpick inserted comes out clean.)
  • Create the glaze by mixing powdered sugar, fresh milk, and vanilla. Once done, pour glaze onto the cake.
  • Create the choco butternut coating by mixing all-purpose flour, white sugar, melted butter, nutmeg powder, powdered sugar, and orange food coloring. Once done, coat the whole cake with butternut coating. Slice the cake and enjoy!
