Ingredients
No-Bake Graham Flan Cake Ingredients
- 1 Cup graham cracker crumbs
- 1/4 teaspoon Salt
- 1 tablespoon sugar Optional
- 1/4 Cup unsalted butter melted
- 1/4 Cup water
- 1 10-gram pack unflavored gelatin
- 1 154-ml can evaporated milk
- 1/2 lemon zest only
- 7 large egg yolks
- 1 large Egg
- 1 168-ml can sweetened condensed milk
Instructions
- In a bowl, mix together graham cracker crumbs, salt, sugar (if using), and melted butter until just moistened. (It should look like wet sand.) Transfer to a 6-inch springform cake pan and press evenly onto the bottom of the pan. Chill until ready to fill.
- In a small bowl, bloom the gelatin: sprinkle the gelatin into the water, stir if necessary to moisten the grains, and set aside until the gelatin has absorbed the water.
- In a saucepan off the flame, combine the evaporated milk, lemon zest, egg yolks, egg, and sweetened condensed milk using a spatula. Place over low heat or in a double boiler. Heat until the mixture has thickened, stirring regularly to prevent the yolks from solidifying, about 10 minutes.
- Once thickened, remove from the heat and add the bloomed gelatin and stir to dissolve completely. Pass through a sieve to remove any lumps.
- Pour into the prepared springform pan and gently tap to remove any bubbles. If desired, pass a culinary torch over the surface of the flan to burst bubbles and achieve a smooth top. Chill completely at least overnight before slicing and serving.
