No-Bake Orange Cake Recipe

Prepare a steamer. Line an 8-inch baking pan with parchment paper. Lightly brush with oil. Set aside.

Zest 1 orange, then thinly slice. Transfer zest to a measuring jug. Juice remaining 3 oranges (about 1/2 cup) and mix juice with zest, 1/2 cup water, and evaporated milk. Set aside.

In a small saucepan over medium heat, bring sliced oranges, remaining water, 1/2 cup sugar, and 1/4 teaspoon salt to a boil. Simmer until oranges are opaque and syrup has thickened, about 30 minutes. Let cool.

In a large mixing bowl, beat eggs and 1 cup sugar. Stir in butter and vanilla extract. Whisk in milk mixture. Sift flour, baking powder, salt, and cinnamon over batter and gently whisk until blended. Pour into prepared baking pan, and place in the steamer. Cover, and let steam for 10 minutes. Check doneness by inserting a toothpick in the cake several times in different areas. Rotate pan and steam again as needed until cooked through. Remove from pan and cool on a wire rack.

To serve, decorate top of cake with caramelized orange slices. Sprinkle orange slices with remaining sugar, and using a torch, melt sugar until crystallized. Slice and serve.
