No-Bake Strawberry Cheesecake Recipe

Make the crust: In a large bowl, mix graham crackers and Choc Nut. Pour in melted butter and mix thoroughly until crumbs resemble the texture of wet sand. Dump mixture into an 8-inchspringform pan. Evenly press crumbs against the bottom of the pan, usingyour fingers and palms to flatten the crust. Chill until ready to use.

Meanwhile, make the filling: In a stand mixer with the beater attachment, beat cream cheese until creamy. Add 1/2 c. sugar and beat until fluffy. Set aside. In a stainless steel bowl, whisk chilled cream to soft peaks. Fold half the whipped cream into the cream cheese until blended. Fold in the remaining whipped cream into cream cheese mixture. Pour onto the chilled crust. Usean offset spatula to smoothen the top. Chill overnight, or at least 4 hours.

Make the coulis: Cut the cheeks off the mango, and dice the flesh. Place ina mini food processor with 1 Tbsp. sugar, and purée until smooth. Transfer to a container. In the same food processor, rinsed and cleaned, add strawberries, remaining sugar, and 1 Tbsp. water. Purée strawberry mixture, and transfer to a container. Chill both coulis until ready to serve withcheesecake. To serve, cut cheesecake into slices and drizzle with coulis.
