You don't need to cook vegetables that long or even at all. In fact, if you have ever heard of the Raw Food Movement or Raw Food Diet, this is exactly the kind of dish that would be part of that diet. The diet consists of food that is not heated or cooked, hence the word "raw". The belief is that heat destroys some of the nutrients that it would otherwise contain.

While this philosophy may dismay people who think all food should be cooked, fruits, vegetables, and other produce can be eaten raw. 

This is what makes this chopsuey recipe so easy to do! All you need is to boil some hot water, make a super delicious and tasty sauce, and toss the vegetables and sauce together. You've got a side dish that's done almost as soon as the vegetables are chopped up with all the nutrients and vitamins still intact. Plus, it makes the most gorgeous plate of vegetables that is equally delicious, hot or cold.

This may be "cooked" using only hot water, but you have to taste to see how tasty and crunchy these vegetables are.
