Ingredients
  

Noodle Bowl with Grilled Fish Ingredients

  • 250 Grams fish fillets (any firm white fish), cut to 1-inch cubes
  • 1/4 Cup Leeks sliced, (1-inch lengths)
  • vegetable oil to grill
  • 1 tablespoon sesame oil
  • 3 cups rice noodles cooked according to package directions
  • Salt
  • Pepper
  • 1 bird’s eye chili (siling labuyo) sliced, plus extra to garnish
  • 1 tablespoon cilantro (wansoy) leaves torn, plus extra to garnish
  • chopped green onions to garnish
  • 2 tablespoons Thai fish sauce
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar

Instructions
 

  • Skewer fish cubes and leeks alternately onto barbecue sticks.
  • Make the marinade: Combine all ingredients in a bowl; mix well. Add fish skewers and marinate in the refrigerator for 30 minutes. Remove fish from the refrigerator 10 minutes before cooking.
  • Heat vegetable oil in a grill pan over medium-high heat. Grill skewers for 3 to 6 minutes per side or until cooked. Set aside.
  • Heat sesame oil in a wok over medium-high heat. Add noodles. Season with salt and pepper. Toss in chilies and fresh cilantro.
  • Place noodles in containers and put skewers on top. Garnish with extra chilies, cilantro, and green onions.
