These fries are filled with umami goodness.
2 nori (dried seaweed)
2 tablespoons roasted sesame seeds
1/2 teaspoon salt
1/2 teaspoon sugar
2 1/2 tablespoons parmesan cheese, grated
1/2 teaspoon chili flakes
750 grams thick-cut potato fries
oil, for frying
3 tablespoons butter, softened
1/2 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon wasabi
Toast 2 nori sheets directly over a low flame until crisp. Cut sheets into small pieces using kitchen shears and transfer to a mortar and pestle.
Add sesame seeds (we used black and white), salt, and sugar; grind until fine and almost powdery.
Transfer mixture to a bowl and add grated Parmesan cheese, orange zest, and chili flakes (optional); mix until well combined. Set aside.
Meanwhile, cook potato fries until golden. Drain excess oil on paper towels, transfer fries to a bowl, and toss in softened butter. Sprinkle nori mixture over fries and toss again to combine. Garnish fries with toasted nori strips, if desired.
Make wasabi mayo: Simply combine mayonnaise, fresh lemon juice, and wasabi. Serve fries with wasabi mayo on the side.
