Atchara, or pickled green papaya, is a staple for many inasal or grilled food. It's a fantastic flavor complement to the smoky, roasted flavors! 

How do you make atchara? 

The main ingredient for atchara is really time. That's because atchara recipes, as is the case with many pickle recipes, is best when given time to sit and let the vegetables pickle in the brine. However, since the papaya has been grated, the time it needs to pickle is super short. Give it a day and you'll taste the difference. Then it's more days of having the perfect side dish to serve with any of your favorite grilled meats.
