Ingredients
Pasta with Creamy Clam Sauce and Mushroom Trio
- 400 Grams tri-colored pasta
- 3 cloves Garlic minced
- 1 Small onion diced
- 2 tablespoons vegetable oil
- 1 kilo clams
- 1 Cup water
- 250 Grams button mushrooms fresh or canned, sliced
- 250 Grams straw mushrooms fresh or canned, sliced
- 250 Grams oyster mushrooms fresh or canned, sliced
- 1/2 Cup Butter
- 5 cups white sauce
- 1 bar cream cheese
- Salt to taste
- 1 tablespoon parsley sprigs chopped
- parmesan cheese for topping
Instructions
- Cook tri-colored pasta or pasta of choice according to package instructions.
- In a big skillet, sauté garlic and onions in vegetable oil. Add clams and cup of water and stir. Cover and allow to cook. Remove clams from shell. (Leave 1/4 with shells for garnishing; set aside.) Strain broth and set aside
- Sauté mushrooms in butter in a large skillet Add the clams, stirring constantly. Pour in the clam broth followed by the white sauce and allow to simmer for 5 minutes. While simmering, grate over the cream cheese and stir into the clam sauce. Season with salt and pepper.
- Mix sauce with cooked pasta. Transfer to a shallow platter and garnish with chopped parsley and clams with shells. Serve hot with Parmesan cheese on the side.
