Ingredients
  

Pata Pork and Beans

  • 4 tablespoons cooking oil
  • 2 pieces onion chopped
  • 6 cloves Garlic smashed
  • 1 piece red bell pepper sliced
  • 1/2 teaspoon dried thyme leaves
  • 1 Table Spoon Spanish paprika (pimenton)
  • 4 pieces bay leaf
  • 1 kilo pork use leg (pata)
  • 2 cups white beans soaked in water overnight, drained
  • 4 cups water
  • 1 can canned diced tomatoes
  • 1 Table Spoon tomato paste
  • Pepper
  • extra virgin olive oil
  • 1 whole head Garlic Optional

Instructions
 

  • Heat oil in a pot large enough to fi t pork and beans. Sauté onions, garlic, and bell pepper over medium heat until onions are translucent and fragrant. Add thyme or rosemary, paprika, and bay leaves.
  • Add tomatoes, chorizo, and tomato paste. Continue to simmer until sauce is thick and pork is tender, about 20 to 30 minutes. Season with salt and pepper; drizzle with olive oil. Garnish with roasted garlic, if desired.
