Pata Pork and Beans
- 4 tablespoons cooking oil
- 2 pieces onion chopped
- 6 cloves Garlic smashed
- 1 piece red bell pepper sliced
- 1/2 teaspoon dried thyme leaves
- 1 Table Spoon Spanish paprika (pimenton)
- 4 pieces bay leaf
- 1 kilo pork use leg (pata)
- 2 cups white beans soaked in water overnight, drained
- 4 cups water
- 1 can canned diced tomatoes
- 1 Table Spoon tomato paste
- Pepper
- extra virgin olive oil
- 1 whole head Garlic Optional
Instructions
- Heat oil in a pot large enough to fi t pork and beans. Sauté onions, garlic, and bell pepper over medium heat until onions are translucent and fragrant. Add thyme or rosemary, paprika, and bay leaves.
- Add tomatoes, chorizo, and tomato paste. Continue to simmer until sauce is thick and pork is tender, about 20 to 30 minutes. Season with salt and pepper; drizzle with olive oil. Garnish with roasted garlic, if desired.
