Ingredients
  

Patani Hummus Ingredients

  • 2 cups lima beans (patani) blanched then skinned
  • water reserved
  • 2 tablespoons olive oil
  • 5 cloves Garlic
  • 2 teaspoons Salt
  • 1/4 Cup olive oil
  • Salt to taste

Instructions
 

  • Boil the blanched lima beans for 30 minutes. Drain and set aside to cool.
  • Meanwhile, heat 2 tablespoons olive oil in a small pan and sauté garlic just until tender.
  • In a blender or food processor, combine boiled lima beans, sautéed garlic cloves, salt, and 1/4 cup olive oil. Blend until well combined and the mixture has developed the consistency of paste.
  • Add reserved blanching water a little at a time (about 1/2 cup) to thin down the mixture to your liking. Season to taste.Substitution tip: You can opt to use dried or canned lima beans if they re more readily available. Simply adjust the amount of water to retain the right consistency of the spread.
