Peanut Butter-filled Chocolate Chip Cookies

Preheat oven to 350ºF.

In a bowl, combine flour, baking soda, and salt; set aside.

In a mixing bowl, mix butter, 1 cup brown sugar, and white sugar until well-combined. Beat in eggs and vanilla. Add the dry ingredients and mix until just combined. Stir in chocolate chips. Chill the dough until firm, about 45 minutes.

In a small bowl, mix together peanut butter and the remaining brown sugar.

Roll a heaping tablespoon of cookie dough into a ball and place on a prepared baking sheet. Flatten slightly then make an indentation in the center. Fill each with 1 teaspoon peanut butter mixture. Roll another heaping tablespoon of dough into a ball, flatten slightly, and then place on top of peanut butter-filled dough. Carefully press the edges to cover and seal. Bake for 15 to 18 minutes.

Remove cookies from the oven. Cool for 5 minutes on the pan before transferring to a wire rack to cool completely.
