Ingredients
Penne, Sausage, and Tomato Bake
- 2 tablespoons vegetable oil
- 1/3 Cup onion chopped
- 2 teaspoons Garlic minced
- 1/2 Cup red bell pepper seeded and diced
- 1/2 Cup green bell pepper seeded and diced
- 3 English Bangels sliced into 1/2-inch thick pieces
- 1 1/2 cups store-bought spaghetti sauce
- 250 Grams penne pasta cooked
- 4 fresh basil leaves torn
- Salt
- 3/4 Cup mozzarella cheese grated
Instructions
- Preheat oven to 375°F.
- In a pan, heat oil. Sauté onions until translucent. Add garlic and sauté until fragrant. Add bell peppers and sauté until tender.
- Add sausages and cook for 1 minute. Add spaghetti sauce and bring to a boil
- Add cooked noodles and mix well. Add basil leaves and season to taste with salt, sugar, and pepper.
- Divide mixture among 4 heatproof bowls. Sprinkle mozzarella cheese on top and bake in the oven for 10 to 15 minutes or until cheese is slightly golden brown. Garnish with basil leaves. Make-ahead tip: Make a big batch of pasta sauce on the weekend (do steps 2 to 4 but don t add the noodles). Portion into small containers; store some in the refrigerator and others in the freezer. Just cook the pasta and bake when ready to eat.
