Ingredients
  

Pork and Tofu Stir-Fry Ingredients

  • 3 tablespoons cornstarch
  • 3 tablespoons rice wine
  • 1 1/2 tablespoons Soy Sauce
  • 4 1/2 tablespoons canola oil divided
  • 500 Grams pork (use pork tenderloin), cut into 1 1/4-inch pieces
  • 1 medium red onion sliced into wedges
  • 2 teaspoons Garlic minced
  • 1 large red bell pepper sliced into thin strips
  • 100 Grams firm tofu (tokwa) cut into cubes
  • 40 Grams snow peas (sitsaro) trimmed
  • 40 Grams bean sprouts (togue)
  • 1/4 Cup cashew nuts toasted
  • cilantro (wansoy) (leaves), to garnish
  • 3 tablespoons kecap manis (Indonesian sweet soy sauce)
  • 3 tablespoons water
  • 2 tablespoons oyster sauce
  • 1 tablespoon Soy Sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper

Instructions
 

  • Combine cornstarch, wine, soy sauce, and 1 tablespoon oil in a large bowl. Whisk to dissolve cornstarch. Add pork, mix well, and marinate for 15 minutes.
  • Make the sauce: Combine the sweet soy sauce, water, oyster sauce, soy sauce, sugar, and pepper in a small bowl and set aside.
  • Heat a large wok until almost smoking. Drain pork and discard marinade. Add 1 tablespoon oil to a pan and sear half of the pork until brown and almost cooked; set aside. Heat 1 tablespoon oil and sear remaining pork pieces. Set aside.
  • Wipe wok to remove brown pork bits. Heat pan over high heat until almost smoking. Add remaining oil. Saute onions for a few seconds. Add garlic and bell peppe; saute for 30 seconds.
  • Add tofu and saute until brown. Add snow peas and saute for 10 seconds. Add bean sprouts and pork mix well.
  • Add sauce and toss to mix well. Cook until sauce is thick. Stir in cashew nuts. Transfer to a serving dish and garnish with silantro leaves. Serve immediately.
