Ingredients
  

Pork Giniling sa Atsuete Ingredients

  • 2 tablespoons annatto seeds (atsuete seeds)
  • 2 tablespoons hot water
  • 2 tablespoons vegetable oil
  • 1 Small red onion chopped
  • 4 cloves Garlic chopped
  • 1 Small tomato deseeded and chopped
  • 500 Grams ground pork
  • 1 1/2 cups water
  • 2 medium Potatoes cubed
  • 1 large carrot cubed
  • 1 tablespoon patis (fish sauce)
  • 1 Cup Corn kernels
  • 1/2 Cup raisins
  • 1/2 Cup frozen green peas thawed
  • Salt to taste
  • ground black pepper to taste

Instructions
 

  • Soak atsuete seeds in hot water for at least 15 minutes. Drain and set aside.
  • Heat oil in a pot. Saute onion and garlic until fragrant. Add tomato and saute until softened.
  • Add pork and cook until light browned, about 5 minutes. Add water and simmer until pork is tender, about 15 to 20 minutes.
  • Add potatoes and carrots and continue simmering until tender, about 5 minutes.
  • Once almost all water has evaporated, add fish sauce and mix. Add corn, raisins, and green peas. Mix until heated through. Season with salt and pepper. Serve immediately.
