Ingredients
  

Pork Loin with Papaya Cilantro Salsa

  • 2 tablespoons canola oil
  • 5 cloves Garlic minced
  • 3 tablespoons dried thyme leaves
  • Salt to season
  • 1 kilo pork (use pork tenderloin), sliced into 1/2-inch-thick-pieces
  • 1/4 Cup onion finely chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons cilantro (wansoy)
  • 2 teaspoons honey
  • 1 medium papaya peeled, seeded, and cut into small dice
  • black pepper to taste
  • onion (grilled), to serve (optional)

Instructions
 

  • Combine canola oil, minced garlic, dried thyme, salt, and pepper. Pour over pork and marinate for 30 minutes in the refrigerator.
  • Make the papaya-cilantro salsa: In a separate bowl, gently mix together onions, lemon juice, cilantro, honey, and papaya. Season with salt and pepper, then refrigerate until ready to serve.
  • Heat a nonstick frying pan. Working in two or three batches, cook pork slices for 8 to 10 minutes per batch or until thoroughly cooked. Transfer pork to a platter. Spoon salsa over pork, then serve.
