Ingredients
  

Pork Tenderloin Ingredients

  • 250 Grams pork (use pork tenderloin pieces), cut to 3/4-inch thick pieces, brined in a mixture of 2 cups water and 2 tablespoons salt for 4 to 6
  • Salt to taste
  • 3 tablespoons olive oil
  • 6 tablespoons Butter divided
  • 2 tablespoons onion chopped
  • 1 tablespoon Garlic chopped
  • 1/4 teaspoon dried rosemary or to taste
  • 125 Grams fresh button mushrooms sliced
  • 1/2 Cup Marsala wine
  • 1/2 Cup chicken stock
  • parsley sprigs chopped, to garnish

Instructions
 

  • Season pork with salt and pepper.
  • Heat oil and 3 tablespoons butter in a pan over medium-high heat. Sear pork, about 30 seconds to 1 minute per side. Cook pork in batches to avoid overcrowding the pan. Set pork aside.
  • Sauté onions, garlic, rosemary, and mushrooms in the same pan until mushrooms are cooked, about 2 to 3 minutes.
  • Add wine and bring to a boil. Reduce heat; simmer until liquid is syrupy, about 2 to 3 minutes.
  • Add chicken stock and bring to a boil. Season with salt and pepper.
  • Add remaining butter and whisk well. Return pork to the pan and simmer for 1 to 2 minutes. Garnish with parsley before serving.
