Ingredients
  

Potato, Bacon, and Corn Chowder Ingredients

  • 8 bacon (use bacon strips), sliced thinly
  • 1 medium white onion minced
  • 2 stalks celery chopped
  • 1 medium carrot peeled and diced
  • 2 medium Potatoes peeled and diced
  • 1 425-gram can canned whole corn kernels drained
  • 1 370 ml can evaporated milk
  • 1/2 teaspoon Salt
  • black pepper to taste

Instructions
 

  • Fry bacon in a skillet over medium heat until fat is rendered and bacon is browned and crisp. Remove half of the bacon and set aside.
  • Add onions, celery, and carrots to the pan; sauté for 5 minutes. Add potatoes, corn, 2 cups water, and evaporated milk. Simmer until potatoes are cooked and liquid has reduced to half, about 10 minutes.
  • Season with salt and pepper. Top with crispy bacon bits before serving.
