Creamy Roasted Potato Salad Ingredients
- 500 Grams Potatoes washed and cubed
- 2 medium carrots cubed
- 3 tablespoons vegetable oil
- 1 Cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 teaspoon lemon juice
- 1/2 teaspoon Salt
- 1/4 teaspoon ground white pepper
- 3 Bacon strips cooked and chopped
- 1/4 Cup white onions finely chopped
- 1/3 Cup celery
- 1/3 Cup chives
- 3 hard-boiled eggs chopped
Instructions
- Preheat oven to 350ºF. Toss potatoes and carrots in vegetable oil.
- Spread vegetables on a baking sheet and roast in the preheated oven until tender, about 30 to 35 minutes. Set aside and let cool completely.
- Make the dressing: Whisk together mayonnaise, Dijon mustard, lemon juice, salt, and ground white pepper in a bowl. Toss in potatoes, carrots, bacon strips, onions, celery, and chives. Top with hard-boiled eggs. Serve immediately or chill until ready.
