Creamy Roasted Potato Salad Ingredients

  • 500 Grams Potatoes washed and cubed
  • 2 medium carrots cubed
  • 3 tablespoons vegetable oil
  • 1 Cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon ground white pepper
  • 3 Bacon strips cooked and chopped
  • 1/4 Cup white onions finely chopped
  • 1/3 Cup celery
  • 1/3 Cup chives
  • 3 hard-boiled eggs chopped


  • Preheat oven to 350ºF. Toss potatoes and carrots in vegetable oil.
  • Spread vegetables on a baking sheet and roast in the preheated oven until tender, about 30 to 35 minutes. Set aside and let cool completely.
  • Make the dressing: Whisk together mayonnaise, Dijon mustard, lemon juice, salt, and ground white pepper in a bowl. Toss in potatoes, carrots, bacon strips, onions, celery, and chives. Top with hard-boiled eggs. Serve immediately or chill until ready.
