Potatoes with Bacon Ingredients

  • 4 large Potatoes scrubbed clean
  • 1/4 Cup Butter softened
  • 1/2 Cup milk
  • 2 tablespoons parmesan cheese
  • 6 slices bacon cooked and chopped
  • 1/2 Cup kangkong (water spinach) leaves packed, roughly chopped
  • 1/2 Cup sweet kernel corn drained
  • 1/2 Cup quick-melting cheese grated
  • Salt to taste


  • Wrap potatoes in 2 paper towels. Place under running water until wet. Place potatoes on a microwave-safe plate, and microwave on High for 10 minutes, or until fork tender. Microwave for an additional minute until tender if needed. Remove from oven, and set aside until just cool enough to handle. Use a kitchen towel if needed.
  • Preheat oven toaster or an oven to 425?F.
  • Slices each potato in half, lengthwise. Scoop out flesh into another bowl, leaving a thin layer to maintain the potato skin’s shape. Transfer potato skins onto a baking sheet.
  • Mash hot potatoes using a fork or potato masher with butter and milk. Stir in Parmesan cheese, bacon, kangkong leaves, and corn. Season to taste with salt and pepper.
  • Scoop mashed potatoes back into the potato skins. Top each with grated cheese. Pop into preheated oven, and bake until cheese is melted. Serve immediately.
