Pulled Pork Adobo Sandwich

  • 1 Table Spoon vegetable oil
  • 1 medium white onion sliced
  • 1 Cup leftover adobo
  • 3 tablespoons brown sugar
  • 3 tablespoons barbecue sauce
  • 3 tablespoons leftover adobo sauce
  • Salt to taste
  • Pepper to taste
  • 3 pieces Pandesal sliced in half and toasted
  • tomatoes sliced

Instructions
 

  • Heat oil in a pan over medium heat. Sauté onions until translucent. Set aside.
  • Sauté shredded leftover adobo in another pan.
  • Add brown sugar, barbecue sauce, and adobo sauce to the adobo. Simmer for 10 minutes. season to taste. set aside.
  • Assemble the sandwich: Fill each pandesal with the pork mixture. Top with caramelized onions and sliced tomatoes.
