Ingredients
  

Pulled Pork in Lettuce Ingredients

  • 1/2 Cup sugar
  • 1/2 teaspoon Salt
  • 1 kilo pork butt
  • 3 to 4 cups water
  • 2 large onion cut into quarters
  • 1 piece pork bouillon cube
  • 1 Table Spoon Soy Sauce
  • 3/4 Cup Bottled barbecue sauce
  • 1 Table Spoon sesame oil
  • 1/4 Cup light brown sugar
  • 1 medium-size head Iceberg lettuce leaves separated
  • 1/2 Cup bottled kimchi

Instructions
 

  • Combine sugar and salt. Rub mixture well onto pork, making sure the whole meat is well coated. Place pork in the refrigerator and marinate overnight.
  • Put water in a large pot. Add onion, pork bouillon cube, and soy sauce. Put marinated pork into the pot and pour liquid from marinade. Cover and boil for an hour and a half.
  • In a small bowl, combine barbecue sauce, sesame oil, and light brown sugar.
  • Preheat oven to 275°F. Take pork out of the pot and transfer to a baking dish. Generously brush the barbecue sauce-sugar mixture all over pork. Bake for one hour, basting occasionally with barbecue sauce.
  • Let cool then shred pork. Place a handful on lettuce leaves, and top with a teaspoon of kimchi. Roll.
