Rack of Lamb Recipe

Preheat oven to 400°F.  

Tip: 

Look for meat that's pink to pale red with firm, white fat. Choose a piece that has specks of fat throughout the meat; these will keep the meat moist and contribute to its flavor and tenderness.

Make the parmesan-nut crust: place all ingredients in the bowl of a food processor. Pulse 4 to 5 times.

Cover the top of the lamb rack with the parmesan-nut mixture. Press mixture firmly onto the meat. Wrap the bones with foil to prevent them from burning.

Roast lamb in the preheated oven for 15 minutes for medium-rare doneness or for 20 to 25 minutes for medium doneness.

Remove from oven and let rest for 1 to 2 minutes before slicing. Arrange on a platter and serve with mint jelly, if desired.
