Red Rice Lugaw Ingredients

  • 1 tablespoon cooking oil
  • 1/4 Cup dried shitake mushrooms
  • 1 Cup red rice washed and rinsed
  • 1 thumb-sized ginger peeled and sliced thickly
  • 6 cups water
  • Salt to taste
  • Pepper to taste
  • 1 200-gram pack squid balls fried


  • In medium-sized sauce pan, saute rice, shitake mushrooms, and ginger in oil for about 3 minutes.
  • Pour in the water and let it simmer for 15 minutes.
  • Season with salt and pepper then let it simmer again for 10 minutes.
  • Add the fried squid balls then cook for 5 minutes.
  • Serve warm and garnish with green onions.
