Revel Bars Recipe

Preheat oven to 350 degrees F or 180 degrees C. Lightly oil and then line with parchment paper with an overhang an 8x8-inch baking pan. Set aside.  

In a large bowl using a large spoon, cream butter, brown sugar, and white sugar until the mixture is well mixed and fluffy. 

Add eggs one at a time, mixing until well blended after each addition. Stir in vanilla flavoring. 

Place a strainer over the bowl and sift the flour, baking soda, baking powder, and salt over the butter mixture. Stir until well mixed, adding the quick-cooking oatmeal halfway through mixing. Use a silicone spatula to scrape the sides occasionally. 

Reserve about 3/4 cup oatmeal cookie dough. Press the remaining cookie dough into the prepared baking pan. Set aside to make the chocolate layer. 

To make the chocolate layer, heat the sweetened condensed milk in a saucepan over medium heat and bring to a boil, stirring. Lower heat then simmer, stirring, until thickened slightly, about 5 minutes. Remove from the heat and add the chocolate. Stir until the chocolate is melted. Stir in salt.  

Pour this mixture over the oatmeal cookie bar in the baking pan. Drop small balls of the reserved oatmeal cookie dough over the chocolate layer.  

Bake in the preheated oven for 30 minutes or until the oatmeal cookie dough layer on the bottom is baked through. Remove from the oven and let cool completely. 

Loosen the sides and use the parchment overhang to remove the cookies from the pan. Slice into 16 squares.
