Beets are super healthy and this easy salad recipe incorporates sweet beets. Roast them until they are soft and throw them into your salads for a nutritious meal.

Ingredients
  

Roasted Beet Salad Ingredients

  • 4 medium beets
  • olive oil for drizzling
  • 1 bunch Romaine lettuce washed and spun-dry
  • 1 bunch Lettuce washed and spun-dry
  • 1 Small pear cored and sliced thinly
  • 1 Cup arugula leaves washed and spun-dry (optional)
  • 1/2 Cup pistachio nuts toasted
  • 100 Grams feta cheese drained and crumbled
  • 1/2 Cup fresh orange juice we used navel oranges
  • 1 tablespoon orange zest grated
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar
  • 2 teaspoons Dijon mustard
  • 1/4 Cup olive oil
  • Salt to taste

Instructions
 

  • Drizzle beets with olive oil and wrap in aluminum foil. Roast in a turbo broiler set at 175ºC or in an oven preheated to 350ºF for 30 to 40 minutes or until tender. Cool. Peel and slice into ¼-inch cubes.
  • Make the dressing: Whisk all ingredients together in a bowl. Season with salt. Divide dressing into 2 portions. Pour 1 portion into the beets and marinate for 1 hour in the refrigerator.
  • Arrange lettuce on a large serving platter. Top with beets, pears, arugula, nuts, and cheese. Serve with dressing.
