Ingredients
  

Roasted Caesar Salad Ingredients

  • 2 cloves Garlic minced
  • lemon juice from 1/2 lemon
  • 1 tablespoon yellow English mustard
  • 1/4 Cup mayonnaise
  • 1/4 Cup olive oil
  • 1 tablespoon sugar
  • Salt
  • Pepper
  • 4 strips bacon
  • 2 heads Romaine lettuce washed, dried, and cut in half lengthwise
  • 2 tablespoons olive oil
  • 2 cloves Garlic minced
  • Salt
  • Pepper
  • 1 Cup croutons
  • 1/4 Cup grated parmesan cheese

Instructions
 

  • Make the creamy Caesar dressing: Whisk together garlic, lemon juice, mustard, and mayonnaise in a bowl. Pour in olive oil in a slow, steady stream while whisking. Season with sugar, salt, and pepper. Whisk until smooth and creamy. Set aside.
  • Preheat a toaster oven. Line baking sheet with foil.
  • Arrange bacon on baking sheet in 1 layer. Cook in the toaster oven until crisp, about 10 minutes. Remove excess oil and foil from the baking sheet. Chop bacon into smaller pieces. Set aside.
  • Place lettuce, cut side up, on baking sheet. Drizzle with olive oil and rub with garlic all over. Season with salt and pepper. Roast until slightly charred, about 5 minutes. Do this in batches, if necessary.
  • Arrange lettuce on a serving bowl. Drizzle with dressing. Sprinkle bacon, croutons, and Parmesan cheese on top. Serve immediately.
