Roasted Cauliflower Ingredients

  • 1 tablespoon Butter
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 small heads about 400 to 600 grams cauliflower trimmed and washed with salt water
  • 1 tablespoon olive oil
  • Salt to taste
  • ground black pepper to taste
  • 100 Grams goat cheese
  • 1/4 Cup heavy cream
  • 1 1/2 tablespoons Garlic chopped
  • 1 teaspoon fresh dill chopped
  • 1 teaspoon fresh tarragon
  • Salt to taste
  • ground black pepper to taste


  • Preheat oven to 450ºF.
  • Combine ½ cup water, butter, and dried herbs in a baking dish large enough to fit cauliflower. Set aside.
  • Make the whipped herbed goatcheese: Add all ingredients to a food processor and whiz for 1 minute or until well combined. Season to taste with salt and pepper.
  • Rub cauliflower with olive oil, salt, and pepper. Place in the baking dish, making sure they stand upright. Cover with foil and roast in the preheated oven for 30 minutes. Remove foil and continue roasting until tops are browned, about 30 minutes. Baste cauliflower 2 to 3 times with the herb mixture during roasting. Let cool then serve with whipped herbed goat cheese.
