Ingredients
  

Roasted Garlic Hummus Ingredients

  • 12 cloves Garlic peeled
  • 2 tablespoons extra virgin olive oil
  • 2 cups white beans rinsed and drained
  • 2 tablespoons lemon juice
  • 3/4 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • bread to serve

Instructions
 

  • Heat garlic and oil in a small frying pan over low heat. Tilt pan downward to let oil and garlic pool on one end. Cook garlic until golden brown, about 7 minutes from the time it starts to sizzle.
  • Place roasted garlic and oil, cooked beans, sun-dried tomatoes, lemon juice, salt, and pepper in a food processor; blend until fairly smooth and thick. Add a bit of water as needed. (You want a thick consistency.) Add more lemon juice, salt, and pepper to taste.
  • Transfer to a bowl and serve with whole-wheat bread, pita bread, or Melba toast.
