Roasted Kalabasa Salad Recipe

Preheat oven to 350 F. Spread kalabasa on parchment-lined baking sheet. Sprinkle with oil; season with salt and pepper. Bake for 15 minutes or until kalabasa is tender. Let cool. 

Meanwhile, puree 1 tablespoon cranberries with vinegar, sugar, garlic, salt, pepper, and oil until thickened. Set aside.

Spread lettuce on a large. serving platter. Top with kalabasa and pears, and remaining cranberries and sunflower seeds. Drizzle with dressing or serve on the side.
