Use sinigang mix as a rub for roast chicken! You'll be surprised by what the little pack can do.
2 tablespoons soy sauce
3 stalks lemongrass (tanglad), pounded and chopped
3 cloves garlic, minced
1 kilo chicken, use leg quarters
1 pack (22-gram) sinigang sa sampalok mix, (we used Knorr)
Combine soy sauce, lemongrass, and garlic in a bowl. Add chicken leg quarters and marinate, covered, in the refrigerator for 30 minutes.
Rub sinigang mix all over chicken, making sure to season all sides and under the skin.
Roast chicken, skin side up, in a turbo broiler set at 375°F for 30 minutes. Turn chicken over and cook for 15 minutes more. Serve immediately.
