Easy Roasted Vegetables Recipe

You can make this in a toaster oven!

Did you know that one of the easiest and most flavorful ways to cook vegetables is by placing it in the oven? It’s true! By roasting vegetables in the oven, you amplify the natural flavors of each vegetable as it browns and caramelizes under the heat. 

We used kamoteng kahel, broccoli, and bell peppers, but you can add or swap any of these out with your favorite kind. Think carrots, potatoes, garlic, cauliflower, kalabasa, and even corn cobs! All these will get a toss in some a thickened balsamic vinegar syrup. 

We use prepared garlic salt but you can make your own! Simply crush garlic with salt in a mortar and pestle, and use as needed. That’s it! Plus, this recipe can be made in a toaster oven, too! Since you want the vegetables to brown, a toaster oven can roast them just as well, if not faster, than in a traditional oven.

Ingredients
  

Easy Roasted Vegetables Ingredients

  • 5 tablespoons olive oil
  • 2 1/2 cups orange sweet potatoes (kamote) peeled, cubed
  • 2 tablespoons garlic salt
  • 2 cups broccoli broken into florets
  • 2 cups green, red, and yellow bell peppers seeded, cut into cubes
  • 1 tablespoon brown sugar
  • 4 tablespoons balsamic vinegar

Instructions
 

  • Preheat oven to the highest setting, around 420 degrees F (220 degrees C). Grease a baking pan with 1 tablespoon olive oil. Set aside.
  • Put sweet potatoes in a mixing bowl and drizzle with 2 tablespoons olive oil and sprinkle with 1 tablespoon garlic salt. Mix well. Transfer to the greased baking dish and roast for 10 to 15 minutes.
  • Put broccoli and peppers in the same mixing bowl. Pour the remaining 2 tablespoons olive oil, brown sugar, and garlic salt. Mix well, making sure the vegetables are thoroughly coated. Add the vegetables to the sweet potatoes. Roast all the vegetables for 10 to 15 minutes more.
  • Add the balsamic vinegar at the end and roast for 5 more minutes. Serve hot from the oven or chilled.
