Yup, that’s right! You don’t need an oven to make “baked” potatoes. Not a fan of salmon? Top the spuds with chili, bacon, or cheese.

Ingredients
  

Salmon and Sour Cream Potatoes Ingredients

  • 4 medium Potatoes washed
  • 1 tablespoon olive oil
  • Salt to taste
  • 2 tablespoons Butter
  • 1/2 Cup sour cream
  • 2 tablespoons chives chopped
  • 1/2 Cup smoked salmon sliced

Instructions
 

  • Pierce potatoes all over with a fork. Rub oil over skin; season with salt and pepper. Place on a microwaveable plate. Microwave on high for 5 minutes. Turn potatoes and cook for 5 more minutes.
  • Make a slit on top of each potato and fill each with ½ tablespoon butter. Top with sour cream, chives, and salmon. Serve immediately.
