Salmon and Sour Cream Potatoes Ingredients
- 4 medium Potatoes washed
- 1 tablespoon olive oil
- Salt to taste
- 2 tablespoons Butter
- 1/2 Cup sour cream
- 2 tablespoons chives chopped
- 1/2 Cup smoked salmon sliced
Instructions
- Pierce potatoes all over with a fork. Rub oil over skin; season with salt and pepper. Place on a microwaveable plate. Microwave on high for 5 minutes. Turn potatoes and cook for 5 more minutes.
- Make a slit on top of each potato and fill each with ½ tablespoon butter. Top with sour cream, chives, and salmon. Serve immediately.
