Ingredients
  

Sarciadong Betilya (Sarciadong Isda) Ingredients

  • 1 whole, about 700 to 800 grams betilya (emperor snapper) gutted, scaled, and cleaned
  • Pepper to taste
  • vegetable oil to deep-fry
  • 3 cloves Garlic minced
  • 1 medium white onion minced
  • 2 medium red native tomatoes seeded and diced
  • 1 red bell pepper cored and diced
  • 1/4 stalk celery diced
  • 1/4 Cup pineapple juice
  • fish sauce (patis) to taste
  • 4 tablespoons cornstarch dissolved in 1/2 cup water
  • 2 Egg beaten
  • Leeks sliced, for garnish

Instructions
 

  • Season fish with salt and pepper.
  • Heat oil in a deep pan. Deep-fry fish until brown on both sides, about 8 to 10 minutes. Drain and set aside.
  • Heat oil in a saucepan. Sauté garlic, onions, tomatoes, bell peppers, and celery until fragrant.
  • Add pineapple juice and 1 cup water. Season with fish sauce and pepper to taste.
  • Add cornstarch mixture, 1 tablespoon at a time, until desired consistency is achieved (you may not use all the cornstarch). Add beaten eggs; stir mixture for 1 minute or until egg streaks form. Turn off heat.
