Ingredients
  

Sausage and Sun-Dried Tomato Frittata

  • 8 large Egg
  • 1/2 Cup milk
  • 1/2 Cup heavy cream
  • 1/4 Cup Tomato sauce
  • 1/2 teaspoon Salt
  • 8 rounds black pepper
  • 2 tablespoons Butter
  • 1 Table Spoon olive oil
  • 1/2 Cup onion chopped
  • 400 Grams italian sausage sliced
  • 1/4 Cup sun-dried tomatoes packed in oil cubed
  • 1 tablespoons green onion chopped
  • 1 tablespoons fresh basil leaves chopped
  • 1/4 Cup feta cheese
  • 2 tablespoons parmesan cheese grated

Instructions
 

  • Whisk together eggs, milk, cream, tomato sauce, salt, and pepper in a glass bowl. Set aside.
  • Add butter and oil to a 9-inch nonstick pan. When the butter has melted, add onions and sauté until softened. Add sausages; cook until golden and fragrant. Add sun-dried tomatoes.
  • Pour frittata mixture into another pan and set heat to low. Cover and cook until frittata is almost set. When almost done, sprinkle chopped green onions, basil, feta cheese, and parmesan cheese on top. Serve hot with bread or rice on the side. 
    Tip:
    You can bake your frittata, too! Pout the mixture in to 5 (4-inch) baking pans and bake in a 350°F oven. Bake for 15 minutes or until the edges are golden and the center feels firm but springs back when touched.
