Ingredients
  

Sausage-Stuffed Potato Boats

  • 4 pieces Potatoes
  • 3 pieces Hungarian sausages
  • 1/4 Cup bell pepper diced
  • Salt
  • 1 Cup quick- melting cheese grated
  • 1 piece lemon

Instructions
 

  • Boil potatoes in a pot until fork-tender, about 15 to 20 minutes. Drain and let cool.
  • Meanwhile, slice sausages into cubes. Heat olive oil in a pan. Add sausages and diced red bell peppers; sauté until sausages are browned. Season with salt and pepper, remove from heat, and set aside.
  • Slice each potato in half lengthwise. Scoop out potato flesh, leaving about ¼ inch intact. Fill potato boats with sausage mixture.
  • Top with grated quick-melting cheese and bake in a toaster oven for 3 minutes or until cheese is melted. Serve immediately.
