Salsicce All’Uva, Italian for Sausages and Grapes, was a dish Margarita Fores learned from one of the Italian signoras she studied with in Rome, Signora Jo Bettoja. The recipe appears in her book, Italian Cooking in the Grand Tradition.

Ingredients
  

Sausages and Grapes

  • 1 1/2 kilos Lughanighe (Italian-Style Sausage)
  • 1 1/2 kilos grapes
  • 12 grapes

Instructions
 

  • In a heavy pan, brown the sausages slightly to render the fat.
  • Add the peeled grapes and simmer over a low flame. The grapes dissolve into almost a mush.
  • If any excess oil appears on the top, remove with paper towels. You may also chill the whole dish when cooked till the excess oil or fat solidifies and is easier to remove. This dish may even be prepared a day in advance.
  • Serve warm and garnish with the remaining colorful skin-on grapes.
