Seafood Flat Rice Noodles Ingredients

  • 1 tablespoon chili sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons kecap manis (Indonesian sweet soy sauce)
  • 2 tablespoons oyster sauce
  • 1 tablespoon sugar
  • 5 tablespoons vegetable oil divided
  • 1 red Thai chili peppers sliced
  • 1 Chinese sausage sliced diagonally
  • 2 cloves Garlic minced
  • 4 large Shrimp peeled and deveined
  • 1/4 Cup Squid (Pusit) sliced
  • 100 Grams flat rice noodles soaked in water until soft, then drained
  • 2 Egg beaten
  • 1/2 Cup bean sprouts (togue)
  • 4 stalks green onion sliced into 2-inch lengths, divided

Instructions
 

  • Combine chili sauce, dark soy sauce, sweet soy sauce, oyster sauce, and sugar in a bowl. Mix until combined and sugar is dissolved. Set aside.
  • Heat 2 tablespoons oil in a medium wok. Add chili and sauté for a few seconds. Add Chinese sausage and cook for 1 minute. Add garlic and cook just until fragrant. Add shrimp and cook just until pink. Add squid and cook just until white. Transfer mixture to a plate and set aside.
  • Add remaining oil to the same wok. Add rice noodles and stir-fry until heated through. Add soy sauce mixture and toss until noodles are tender. Pour in beaten eggs and stir constantly until set.
  • Add bean sprouts and half of the green onions; toss to combine. Return the sausage-seafood mixture to the pan and toss to mix well.
  • Remove from heat and transfer to a serving plate. Garnish with remaining green onions and serve immediately.
