Shrimp and Black Mushroom Fried Rice

Make the marinade: Combine oyster sauce, soy sauce, and sugar in a bowl. Marinate shrimp for 10 to 20 minutes.

In a wok or a large frying pan over medium heat, sauté onions in olive oil until translucent. Add shrimp and cook well; reserve marinade.

Add mushrooms and half the shrimp marinade. Add rice, making sure to mix well.

Lower heat and pour in beaten egg. Mix well until incorporated.

Season with salt and pepper. Garnish with chopped spring onions before serving.

Cooking tip: For a more colorful and flavorful dish, add other meats and vegetables such as diced ham or sliced carrots.
