Shrimp and Chicken Skewers Ingredients

  • 1 tablespoon pine nuts
  • 3 cloves Garlic chopped
  • 2 cups basil leaves
  • 1/4 cup olive oil
  • 1/4 Cup parmesan cheese freshly grated
  • Salt tot aste
  • ground black pepper to taste
  • 1/2 kilo shrimps peeled, deveined, and tails intact
  • 1 kilo chicken thigh fillets sliced
  • 8 fresh chunks pineapple


  • Preheat grill.
  • In a food processor, finely grind pine nuts and garlic before adding basil leaves. Pour in olive oil. Season with salt, pepper, and stir in Parmesan before transferring to a bowl. Set aside.
  • Season shrimps and chicken with salt and pepper. Using metal skewers, alternately spear shrimps and chicken, and end with pineapple chunks. Grill until cooked through. Once done, baste with pesto. Recipe originally published in the March 2015 issue of Good Housekeeping Philippines.
