Ingredients
Sinigang na Hipon sa Kamias
- 8 cups water
- 2 tomatoes quartered
- 1 onion sliced
- 1 to 2 tablespoons fish sauce (patis)
- 1 and 1/2 cups kamias
- 2 pieces siling pansigang
- 6 pieces okra sliced into 1-inch pieces
- 1 radish (labanos) sliced
- 2 eggplant sliced
- 5 stalks sitaw (string beans) sliced into 3-inch lengths
- 6 pieces sigarilyas cut into 1-inch slices
- 500 Grams Prawns (Sugpo) cleaned
Instructions
- Combine water, tomatoes, and onion in a nonreactive pot. Bring to a boil then lower heat to a simmer.
- Remove tomatoes and mash with a fork. Return to the pot. Add fish sauce, kamias, and siling pansigang. Bring to a boil then lower heat and simmer for 10 minutes.
- Mash kamias in the pot and continue simmering. Add the rest of the vegetables and prawns. Simmer until prawns turn pink. Season with more fish sauce to taste. Pan tip: Make sure to use a nonreactive pan since the acid may react with other types of cookware. Veggie-cooking tip: Get the best-looking vegetables available and don t boil the stew for too long so the veggies don t get overcooked.
